His fascination with whole bunch ferments has created a wine with fine tannins and a small amount of carbonic maceration that makes it so delicious to drink right now without needing years to wait for the tannins to soften.
Timo Mayer is one of the Yarra Valley’s most respected cult hero winemakers. He comes from a family of winemakers with a history of 400 years in the industry. German by background but Aussie at heart. His vineyards are situated on very sleep slopes of Healesville, Victoria. Minimal interference, maximum flavour and complexity making his wines completely unique and remarkably rare.
