Sparkling Shiraz is probably one of Australia's greatest contributions to the wine world. What used to be known as Sparkling Burgundy until the term was banned, Sparkling Shiraz has been produced in Australia since 1881! Made using the same traditional Champagne making method the Rockford Black Sparkling Shiraz is a hidden treasure many have yet to discover. It’s a great tribute to the sparkling burgundies Rockford winemaker Robert O’Callaghan encountered when he worked for Seppelt in the 1970s. The base wine is matured in large old wood for three years before being tiraged, and then left on lees for a year before disgorgement and further cellaring prior to release. With its unique combination of soft tannins, delicate beads, ripe, juicy black fruits and hint of sweetness, a good sparkling red is the perfect match for dishes that might overwhelm a still, dry red. The bubbles add a touch of freshness making this a great drop on a hot summer day. No wonder it's most popular over Christmas and New Years. Though why limit yourself to drinking this great Aussie creation to just the festive season?
