Jasper Hill wines are 100% estate grown and bottled. Established in 1975, the winery has always practised organic and biodynamic farming methods and has never used any synthetic chemicals on their plants or soil. Georgia's Paddock is the largest of their vineyards, it's 12ha in total with a NW aspect and deeper more classic soil structure when compared to Emily's paddock. Situated 320m above sea level in Heathcote, the large diurnal temperature range which helps the grapes retain natural acidity and structure.

All wines are produced with the same minimal intervention during fermentation and maturation, allowing the terroir of each individual vineyard to be highlighted. Wild yeast fermentation, aged in French oak barriques for 15 months, no fining, coarse filtration.

Tastes Like? 

Highly aromatic nose with aromas of rose petals, cherry and a hint of cedar. Similar flavour notes of dark cherries, savoury, full bodied with firm tannins and balanced acidity. Nice long finish.
