Why you'll love it?

Disznoko is one of the first Tokaji producers of Hungary. What makes these wines so special is the way they are produced. The best aspect for these vines are usually on south facing slopes in order to receive the most sunlight during the day. The humidity from nearby river Bordog causes morning mist which clears into sunny afternoons creating the perfect environment for growing noble rot. This might sound gross, but this rot pierces the grapes skins causing it to shrivel up, increase in sugar content and flavour intensity. The harvest process for making the best Tokaji is very labour intensive. As the grapes rot at different speeds throughout the estate, they must handpicked in batches.  The grapes are picked berry by berry and are collected in puttony (Hungarian for buckets). Traditionally the wines were labelled between 3-6 puttonyos to indicate the number of aszú buckets added to the grape must. 

Whereas nowadays the puttonyos number can correspond to the amount of residual sugar in the wine, Disznóko adhere to the ancient method; 5 wooden hods of 55 pounds of dried grapes are macerated with 136 litres of base wine before the resulting Aszú then ferments at a snail's pace (for as long as it takes). It then ages for 2 years in used Sauternes barrels.

Tastes Like?

This is a fabulously intricate wine of awesome aromatic complexity - it's chock-a-block with fresh and dried fruit flavours, earthy spices and floral honey notes. It's super complex with a tangy cut of tangerine and orange brightness to balance the wine's oozing sweetness (it has roughly 130 grams residual). The balance between these elements brings a sense of lightness and a squeaky clean finish, allowing the wine to match savoury dishes as well as sweeter desserts.
