BK Wines is a small artisan producer owned by Brendon and Kirsty Keys. Brendon is a Kiwi turned Aussie DJ, Chef and now Winemaker. Modern French is what he calls his winemaking style with focus on wild yeast and oak and knowing when to intervene. He is a man who's has a simple focus: to make honest and righteous wine.

The 2015 Swaby Chardonnay is insane. The Swaby vineyard is located in Piccadilly, the coolest part of the Adelaide Hills and is an area renowned for producing powerful and deeply textured Chardonnay. In the hands of a skilful winemaker one can expect powerful yet and elegant wines with beautifully balanced acidity. Precisely what the Swaby delivers. Barrel fermented in 30% new French oak with fortnightly battonage. Battonage is an old world French winemaking technique which involves regular stirring of lees. This interaction with the wine creates complexity, aroma and flavour compounds, palate weight and texture in a wine. 

Tastes Like?

Pale yellow in colour with an intense nose offering aromas of matchstick head, white peach, pear and a hint of honey. The palate is textured and firm with great intensity and flavours of lemon curd, white peaches, honeydew melon with a slightly creamy mid palate underscored by racy minerality and long lingering finish. 2015 was the best vintage in the Adelaide Hills for more than a decade and this Chardonnay is a superb representation of the vintage and region.

Perfect with: Mayo roasted poussin and Waldorf salad, freshly shucked Pacific oysters or pan-fried salmon and fennel salad
